Telluride is the town where the restaurant-capacity argument is strongest. It is geographically hemmed in, the season is intense, and there simply are not many places that will seat a group of twelve on a Friday in February. Groups who leave dinner to chance here regularly end up eating in shifts.
It is also a long way from anywhere. Telluride is a full day's round trip from the Front Range, so chefs need more notice than they do for Summit County or the Vail Valley, and travel is a real part of the quote. We would rather tell you that plainly than pretend otherwise.
